Smoking pork loin can be a challenge, but if you do everything right, this cut of pork is absolutely delicious. Pork loin is a very lean cut of meat, which means it can dry out easily. There are a few different ways you can cook pork loin on a smoker. The easiest way is to cook the loin at around 250°F until it reaches an internal meat temperature of 145°F. Another way is similar to a reverse sear. Cook the loin low at 180°F until it reaches 120°F, then finish at 500°F until it reaches 145°F internal. Either of these methods can give you moist and juicy loin meat if done correctly. I’ll show you both ways.
